Deep-fried food (揚げ物) comes from deep-frying, a type of cooking method. It also refers to dishes made with this cooking method.

Overview

Deep-fried food (揚げ物, agemono) is food cooked by placing it in hot oil (140 to 200 degrees Celsius).


Often, the food is covered with a flour-based batter called coating, and when no batter is used, the food is called frying directly (素揚げ).


The oil used can be salad oil, sesame oil, olive oil, or lard, but in any case, fresh oil is preferable.
