Overview
Indian cuisine (インド料理, Indo ryōri) refers to cuisine that originated in India. It is commonly said that "Indian food is all curry," but this is of course not true.
Because it is a hot region, there are many medicinal soups and stews that make heavy use of herbs and other medicinal plants and spices, and the well-known curries are quite smooth, unlike those known in Japan and the West.
Indian cuisine differs greatly from North Indian, South Indian, and Bengal (East Indian and Bangladesh) cuisine, but most Indian restaurants in Japan serve North Indian cuisine, with South Indian cuisine being extremely minor.
