Overview
Frozen desserts (氷菓子 kōrigashi / 冷菓, hyōka) are ice cream, sherbet, popsicles, and other snacks made by adding sugar and flavoring to cream, milk, fruit juice, or other ingredients.
Ice cream is often eaten in summer to cool off, but it is also eaten as an after-dinner dessert or after a bath, regardless of the season.
In winter, many people in Hokkaido heat up their rooms to the point where it becomes too hot and eat ice cream in the room, making winter ice cream consumption the highest in Japan.
According to current Japanese regulations, hyouka (冷菓) is defined as ice cream that does not contain milk fat or milk solids, and is distinguished from ice cream.
In Tokyo from the late Taisho period to the early Showa period, shaved ice covered with syrup and wrapped in wax paper was sold at night stalls and was called hyogashi (氷菓子).
In addition to ice cream and sorbet, the term "chilled dessert" is also used to refer to other types of chilled confectionery such as jelly, pudding, parfait, and mizu yokan.
