Overview
Kimchi (キムチ, kimuchi / 김치, gimchi) is a generic name for Korean tsukemono. It is also called Korean tsukemono (朝鮮漬) in Japanese.
Vegetables are first pickled in salt, then mixed with seafood (kombu, dried seafood, etc.) and spices (chili peppers, garlic, etc.).
The use of plenty of chili peppers gives it a bright red color and pungent taste.
It is eaten alone or as a garnish (especially at barbecue restaurants), and is also used as a stir-fry ingredient (e.g., pork kimchi, stir-fried with pork) and as an ingredient in hot pots (kimchi jjigae).
